How To Cook Smoky Coconut Rice

First of all, just before we go into the main the main as our people normally say, HAVE YOU HAD PARTY SMOKY JOLLOF RICE BEFORE?

This is not to veer off guys, the food on the menu is SMOKY COCONUT RICE. So I went to see a friend of mine after Lagos traffic dealt with me. She suggested I cool off with a chilled glass of juice and hot smoky coconut rice.

Omo, i didn’t wait for her to ask twice before the offer goes off the table. I quickly jumped on the offer, I mean who doesn’t like FREE food? I chopped till i was over belle filled. It was the best smoky jollof rice that I have ever had.

I mean the coconut flavor, carrot, green peppers, crayfish, liver, dried fish and everything you can call PROTEIN. Chioma finished work for this party smoky coconut rice.

 

INGREDIENTS

5 Big sized coconuts

Crayfish

Dried Fish

Chopped liver

5 Cups of rice

Chopped carrots

Maggie

Chopped green pepper

Fresh pepper

 

STEP BY STEP ON HOW TO MAKE A KILLER SMOKY JOLLOF RICE

Blend your coconut till it is smooth and extract the milk.

Pa boil your rice for 5 mins and ensure it is not too soft

Filter out the water from the rice

Pour the coconut milk into the pot and allow it shimmer for 5 mins

Add meat stock, alongside crayfish and Maggie

Add your rice and allow to cook for 20 mins.

After 20 mins, add your chopped veggies, carrots, liver and any other protein you desire.

Allow on fire for another 5 mins then stir

After 5 mins you can serve with chilled chapman and salads.

 

So when next you are caught up in Lagos traffic, don’t worry! THEY MAY JUST BE A CHIOMA AROUND TO SERVE YOU HOT SPICY SMOKY COCONUT RICE!
